An easy and delicious Italian Wedding Soup made up of spinach, pasta, meatballs, and parmesan cheese.

- 1 small onion, grated
- 1/3 cup chopped fresh Italian parsley
- 1 large egg
- 1 tsp salt
- 1 slice white bread (no crust) grated
- 1/2 cup grated Parmesan (plus 2 tbsp)
- 8 oz lean ground beef
- 8 oz ground pork
- 12 cups chicken broth
- 10 oz frozen chopped spinach
- 8 oz Acini de Pepe
- 1 tsp garlic, minced
To make the meatballs: Add the onion, parsley, egg, garlic, salt, and bread to a large bowl and stir until combined.
Add the cheese, beef and pork. Shape the meat mixture into small (approx. 1 inch) meatballs and place on a baking sheet.
In a large pot, add the broth and frozen spinach and bring to a boil. Help to break up the spinach with a wooden spoon. Add the meatballs (uncooked) and simmer for a few minutes, stirring occasionally.
Add the pasta and continue simmering for 20 minutes.
Season with salt and pepper to taste. Sprinkle with parmesan cheese before serving.
