Ratatouille
While digging through some of my grandma’s old recipes, I came across this recipe for Ratatouille. To be honest, I wasn’t even sure what exactly ratatouille was. So I decided to whip it up and see what came out. I was pleasantly surprised! This version is a light dish made up of fresh vegetables and herbs.
This would make a great meal during the summer time, with the fresh veggies from the garden and it makes for a nice and light meal during those hot, summer months.
There are a lot of different ways you can serve this dish as well! It would be great over top of a cheesy polenta if you are craving comfort food. Another great option would be over pasta! I could never say no to a pasta dish with veggies.
Ingredients:
- onions
- green peppers
- garlic
- eggplant
- zucchini
- tomatoes
- pimento olives
- parsley
- salt

Ratatouille
Ingredients
- 2 medium onions, chopped
- 2 medium green peppers, chopped
- 1 clove garlic, minced
- 1 medium eggplant, peeled and cut 3/4 inch slices
- 2 medium zucchini, cut crosswise into 1/4 inch slices
- 5 medium tomatoes, peeled and chopped
- 1/4 cup parsley, chopped
- 2 tsp salt
- 1/2 cup pimento olives, sliced
