Chocolate Chip Pumpkin Oat Bars
Ingredients
- 1 cup white flour
- 1 cup steel cut oats
- ½ tsp baking soda
- ¼ tsp salt
- 2 tsp pumpkin spice
- ½ cup cooking oil
- ½ cup sugar
- 2 eggs, whisked
- 1 tsp vanilla extract
- ½ cup chocolate chips
Instructions
- Preheat oven to 350°.
- Grease an 8×8 cooking pan with cooking spray.
- In a medium bowl, mix together flour, oats, baking soda, pumpkin spice, and salt.
- In a large bowl, beat with an electric mixer pumpkin, vegetable oil, sugar, eggs, and vanilla until combined.
- Add the dry ingredients to the wet ingredients and stir until well combined.
- Stir in the chocolate chips just until combined.
- Pour the batter into the prepared baking dish and spread evenly with a rubber spatula.
- Bake in the oven for 16-18 minutes. Test the doneness my checking the center with a toothpick. If the toothpick comes out clean remove the baking dish from the oven.
- Let cool completely before serving.
