Chocolate Chip Pumpkin Oat Bars

Ingredients
  

  • 1 cup white flour
  • 1 cup steel cut oats
  • ½ tsp baking soda
  • ¼ tsp salt
  • 2 tsp pumpkin spice
  • ½ cup cooking oil
  • ½ cup sugar
  • 2 eggs, whisked
  • 1 tsp vanilla extract
  • ½ cup chocolate chips

Instructions
 

  • Preheat oven to 350°.
  • Grease an 8×8 cooking pan with cooking spray.
  • In a medium bowl, mix together flour, oats, baking soda, pumpkin spice, and salt.
  • In a large bowl, beat with an electric mixer pumpkin, vegetable oil, sugar, eggs, and vanilla until combined.
  • Add the dry ingredients to the wet ingredients and stir until well combined.
  • Stir in the chocolate chips just until combined.
  • Pour the batter into the prepared baking dish and spread evenly with a rubber spatula.
  • Bake in the oven for 16-18 minutes. Test the doneness my checking the center with a toothpick. If the toothpick comes out clean remove the baking dish from the oven.
  • Let cool completely before serving.
