My grandma made Italian Wedding Soup regularly and it was one of my favorite meals. The meatballs are really what did it for me. Fresh meatballs in a hearty soup is like a hug in a bowl. This soup will warm your soul on a chilly day.

For my meatballs, I use half a pound of beef and half a pound of pork, but if you would prefer you can substitute for all beef meatballs or all pork. They will be so delicious either way.

There are a lot of things you can serve with this classic soup:

Storage

Wedding Soup can be stored in the refrigerator for up to 3 days. To reheat, place in a pot on the stove or reheat in the microwave.

Pasta Substitutions

I would highly recommend using Acini de pepe for this recipe, but sometimes my store will not have it in stock. You can substitute using any small pasta such as ditalini or orzo.

Ingredients
  

  • 1 small onion, grated
  • 1/3 cup chopped fresh Italian parsley
  • 1 large egg
  • 1 tsp salt
  • 1 slice white bread (no crust) grated
  • 1/2 cup grated Parmesan (plus 2 tbsp)
  • 8 oz lean ground beef
  • 8 oz ground pork
  • 12 cups chicken broth
  • 10 oz frozen chopped spinach
  • 8 oz Acini de Pepe
  • 1 tsp garlic, minced

Instructions
 

  • To make the meatballs: Add the onion, parsley, egg, garlic, salt, and bread to a large bowl and stir until combined.
  • Add the cheese, beef and pork. Shape the meat mixture into small (approx. 1 inch) meatballs and place on a baking sheet.
  • In a large pot, add the broth and frozen spinach and bring to a boil. Help to break up the spinach with a wooden spoon. Add the meatballs (uncooked) and simmer for a few minutes, stirring occasionally.
  • Add the pasta and continue simmering for 20 minutes.
  • Season with salt and pepper to taste. Sprinkle with parmesan cheese before serving.
