This insanely easy butternut squash pasta sauce is a great go-to weeknight dinner. Using frozen butternut squash takes out all the hard work, but leaves in all the nutritional benefits. The kids will love it too!

Note: While the pasta is cooking, make sure to grab a measuring cup and reserve the pasta water BEFORE you drain it. I always find myself draining the pasta and forgetting to reserve the cooking water. If this happens to you, NO WORRIES! Just use warm tap water and you will still receive the desired effect.

Insanely Easy Butternut Squash Pasta Sauce

This INSANELY easy butternut squash pasta dish is healthy and easy to make as a weeknight dinner option. With clean, healthy ingredients, and minimal prep time dinner will be on the table in a flash!

Ingredients
  

  • 1 16oz bag frozen butternut squash, cubed
  • cups fresh tomatoes, roughly chopped
  • ½ yellow onion, sliced
  • 2 tbsp olive oil
  • 2 tsp garlic powder
  • 1 tsp italian seasoning
  • 1 tsp salt
  • ¼ tsp black pepper
  • 1 lbs pasta
  • cup pasta water, reserved

Instructions
 

  • Preheat oven to 450° and line a baking sheet with parchment paper.
  • Combine frozen butternut squash, tomatoes, and onion on the baking sheet.
  • Add olive oil, garlic powder, Italian seasoning, salt, and pepper to the vegetables and mix until evenly coated.
  • Place in the oven and bake for 20 minutes.
  • Cook the pasta according to package directions.
  • Once pasta is cooked, reserve ⅓ cup of the cooking water and set aside.
  • Remove the vegetables from the oven and immediately add to food processor or blender with the reserved cooking water. Blend until smooth. Add more water if necessary to achieve the desired texture.
  • Pour the sauce over the cooked pasta and stir until combined.
  • Serve while warm with parmesan cheese.
